Typically it’s easy to take the food that appears before us for granted particularly during the holidays. However, there is one really important creature responsible for much of our favorite Thanksgiving fare: Honey Bees.

According to the U.S. Department of Agriculture, these under-appreciated workers pollinate 80 percent of our flowering crops which constitute 1/3 of everything we eat and use to celebrate during our holidays. Losing them could affect dietary staples such as:
·        Apples
·        Broccoli
·        Strawberries
·        Nuts
·        Asparagus
·        Blueberries
·        Cucumbers
Essentially, if Honey Bees disappear, they could take most of our insect pollinated plants with them, potentially reducing mankind to little more than a water diet. Unfortunately, bees are at risk from habitat invasion, climate change and the excessive use of harmful pesticides called neonicotinoids.
Many bee poisoning problems could be prevented by practicing green agriculture avoiding the use of harmful pesticides and educating the public, especially the youth, on the Honey Bee situation. If we get new generations helping the bees, the more people the better. I don’t think that people understand we have a big problem with honey bees and that we need to conserve them because they are valuable creatures for human survival.

As a small way of showing our gratitude here is our sweet mashed potatoes with Santa Monica Wildflower Honey recipe.
Mashed Sweet Potatoes with Santa Monica Wildflower Honey
Ingredients
•       6 lb sweet potatoes
•       1 stick (1/2 cup) unsalted butter
•       1/2 cup heavy cream, warmed
•       3 tablespoons of Santa Monica Wildflower Honey
•       1 teaspoon salt
•       1/2 teaspoon ground cinnamon
 
Directions
Preheat oven to 425°F. Prick each potato several times with a fork and bake until very tender, about 1 hour. Remove and cool slightly.
Halve potatoes lengthwise and scoop out warm flesh into a large bowl. Mash potatoes with a potato masher. Stir in butter, cream, Santa Monica Honey and salt. Season with cinnamon to taste.
